Role Overview The
Restaurant Manager
will lead
pre-opening
and manage the restaurant operations
beyond opening . This is a pivotal leadership role responsible for delivering a consistently excellent guest experience, building strong front-of-house standards, and supporting the kitchen team in a concept featuring a
semi-open kitchen
with
open fire cooking .
Key Responsibilities
Lead
pre-opening operations
and smooth transition into a fully operational restaurant
Set, maintain and elevate
front-of-house standards : service flow, guest journey, table management, and attention to detail
Deliver a high‑quality
country gastro-pub
experience with
fine dining
presentation and service standards
Oversee daily restaurant operations, including rota planning, service preparation, and stock control support
Recruit, train and develop front‑of‑house team members; establish coaching routines and performance standards
Ensure full compliance with relevant regulations, including
licensing
requirements
License Holder Requirement
License holder required
(responsible for ensuring compliance with licensing conditions and legal requirements)
Skills&Experience
Proven experience as a
Restaurant Manager ,
Front of House Manager , or
Floor Manager
Strong knowledge of fine dining and/or premium gastro‑pub service standards
Ability to lead and influence teams during a
refit/refurbishment
and opening period
Confident operational leadership: scheduling, standards, training, and guest experience management
Strong understanding of licensing responsibilities and compliance (essential)
